Beautiful Chef Knife - Twisted Damascus

Today I bring you a video of a very beautiful chef's knife that I have just completed. It has traditional chef elements with a detail on the handle and bolster that has already become a strong signature of my work.
The damascus pattern is twisted, with a simple mosaic base. The blade is approximately 10 inches long, and 4mm at the thickest part of the back, gradually reducing to approximately 1mm at the tip. The handle material is natural wood.
Anyone watching will notice that in the middle of the video I change places. This happens because this was the last knife I forged in my workshop before it was stolen, and I completed it in a friend's workshop, where I had already made the Viking sword in the last video. There is also the presence of a terrible beast, the owner of the workshop.

Hoje trago o vídeo de uma faca chef muito bonita que acabo de concluir. Ela tem elementos das chef tradicionais com um detalhe na empunhadura e no bolster que já se tornou uma assinatura bem forte do meu trabalho.

Can I ask why the blades are so thick then ground down loads? Seems like more work and more waste? Also could you use all the filings to make another knife? Use a magnet to separate the grinding disc partials from the steel.
